OUR ENGINE, TEAMWORK
Our chef and manager is Jordi Guitart. At only twenty-four years old, this young countryman decided to go ahead with this beautiful project that we have now. With higher studies in catering and continuous training, Jordi has been a stager in prestigious restaurants in France and has worked alongside highly qualified professional teams.
From the very beginning, our team has been committed to traditional cuisine, taking advantage of seasonal and local products, putting modern and avant-garde touches within everyone's reach.
Jordi is the soul of our house, the one who thinks of new things, the one who executes different techniques and the one who looks for ways to satisfy diners with good meals. It brings the whole team a cooperative way to work as a group and make Cal Marquès work like a family restaurant.
In the Sala, we have Cristina Castells, one of the other fundamental pillars of our house. With studies in sommelier, Cristina is also a WSET diploma as a wine expert. She is the head of the room and the sommelier, the person who talks to the diner and helps turn the dishes prepared in the kitchen into an unforgettable experience for our customers. It does this by betting on a very careful service at the table, from the cellar (with very varied, surprising and original references), the recommendations of each season and pairings, to the coffee service, for example. In addition, since Cal Marquès is a small, family project, Cristina often also contributes ideas, advice and experience in the kitchen.
The engine of our house is the team.
In the kitchen there is also Marc who is in charge of creating, together with Jordi, all the preparations that make up our menu. From jams, bases, ice creams and cakes to stews and cannelloni, among others. Marc is a student of Gastronomy, Catering and Pastry and he started at home doing his cooking internships, although he soon became part of the family.
In the room you will also find Ahmed, who welcomes you to our home with a smile from ear to ear and attends to you with great professionalism. He helps so that everything is perfect, from recommendations when choosing dishes to making the best coffees in the Vall de Camprodon.
These are the people who make it possible for this gastronomic project to continue. We are dynamic people who intend to contribute to Cal Marquès our experience and joint work to make Cal Marquès what it is.
Without the kitchen-living room symbiosis we would never have managed to become a point of reference in the Vall de Camprodon.
